- 2 ripe peaches (peeled, pitted, and diced)
Pudding Base:
- 1½ cups unsweetened almond milk (or milk of choice)
- ½ cup plain or vanilla Greek yogurt (or dairy-free yogurt)
- ¼ cup chia seeds
- 1–2 tablespoons maple syrup or honey (to taste)
- ½ teaspoon vanilla extract
- pinch of salt
Toppings:
- Additional peach slices for topping
Instructions
- Blend the Fruit: In a blender, combine the diced peaches, almond milk, yogurt, maple syrup or honey, vanilla extract, and a pinch of salt. Blend until smooth.
- Combine Ingredients: Pour the mixture into a bowl or jar and stir in the chia seeds until well distributed.
- Chill: Cover and refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes to prevent clumping.
- Serve: When ready to serve, give the pudding a good stir and top with fresh peach slices or your favorite toppings.
Notes
- For a thicker pudding, use less almond milk or add more chia seeds.
