These Garlic Roast Potatoes are a simple yet flavorful side dish perfect for any meal. Crispy on the outside and tender on the inside, they are seasoned with garlic, herbs, and a hint of pepper for a delicious twist.

Potatoes:
- 2 pounds baby potatoes or Yukon Gold potatoes, halved or quartered
Seasoning:
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon fresh rosemary or thyme (or ½ teaspoon dried)
Garnish:
- Chopped parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss Potatoes: In a large bowl, toss the potatoes with olive oil, garlic, salt, pepper, and rosemary or thyme until evenly coated.
- Roast: Spread the potatoes out on the prepared baking sheet, cut side down. Roast for 30–35 minutes, flipping once halfway through, until golden brown and crispy on the outside and tender inside.
- Finish: Remove from the oven and sprinkle with fresh parsley if desired. Serve hot.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting and dry them thoroughly.
- You can also add Parmesan in the last 5 minutes of roasting for a cheesy twist.
