  • 2 ribeye steaks (1 to 1 1/2 inches thick)
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Garlic Butter Basting

  • 3 tbsp unsalted butter
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme (optional)


Instructions

  1. Prepare the Steaks: Remove the ribeye steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat both sides dry thoroughly with paper towels to ensure a good sear. Season generously on both sides with salt and black pepper.
  2. Heat the Skillet: Place a heavy skillet, preferably cast iron, over high heat and add 1 tablespoon of olive oil. Heat until the oil is just smoking, which indicates the pan is hot enough to sear the steaks properly.
  3. Sear the Steaks: Carefully add the steaks to the hot skillet, being sure not to move them around. Sear the first side for 3 to 4 minutes to develop a rich, brown crust.
  4. Flip and Add Butter and Aromatics: Flip the steaks and immediately add the unsalted butter, smashed garlic cloves, and fresh rosemary or thyme sprigs to the pan.
  5. Baste the Steaks: Tilt the pan slightly so the melted butter collects on one side. Using a spoon, continuously baste the steaks with the garlic butter mixture for 2 to 3 minutes, helping them cook evenly and absorb the aromatic flavors. Aim for a medium-rare temperature of 130°F (54°C).
  6. Rest and Serve: Remove the steaks from the pan and let them rest on a plate for 5 to 10 minutes to allow juices to redistribute before slicing and serving.
