Ingredients
Scale
Eggs
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Quesadilla
- 2 flour tortillas
- 1/2 cup shredded cheese
- 1 tablespoon butter
Serving
- 1/4 cup salsa
Instructions
- Heat the skillet: Heat a nonstick skillet over medium heat to prepare for cooking the eggs and quesadilla.
- Melt butter: Add the butter to the skillet, allowing it to melt fully while swirling the pan to evenly coat the bottom.
- Fry the eggs: Crack the eggs into the skillet carefully to keep yolks intact, then season with salt and black pepper.
- Cook the eggs: Cook for approximately 2-3 minutes until whites are set but yolks remain runny.
- Remove eggs: Gently slide the fried eggs onto a plate using a spatula and set aside.
- Warm first tortilla: Place one flour tortilla into the same skillet and heat for 1-2 minutes until it’s warm and slightly golden.
- Add cheese: Evenly sprinkle 1/4 cup of shredded cheese on top of the warmed tortilla.
- Top with second tortilla: Place the second tortilla over the cheese layer.
- Press gently: Use the spatula to press down on the quesadilla to help the cheese start melting and stick the layers together.
- Cook first side: Let the quesadilla cook for 1-2 minutes until the bottom tortilla is lightly browned and crispy.
- Flip quesadilla: Carefully flip it over to cook the other side for another 1-2 minutes until golden brown and cheese is fully melted.
- Remove and slice: Transfer the quesadilla to a cutting board and slice into wedges using a sharp knife.
- Assemble and serve: Place the fried eggs on top of one wedge and spoon the salsa over the eggs. Serve immediately for best flavor and texture.
Notes
- To keep yolks runny, avoid overcooking the fried eggs.
- You can use any shredded cheese you prefer, such as cheddar, Monterey Jack, or a Mexican blend.
- Serve with extra salsa or hot sauce on the side for added flavor.
- For a gluten-free version, substitute tortillas with gluten-free alternatives.
- Butter can be replaced with oil if desired, but butter adds richness and flavor.
