Description

This Fresh Tomato Tart is a delightful and light appetizer featuring flaky puff pastry topped with a creamy crème fraîche and wholegrain mustard spread, finished with fresh slices of ripe tomatoes and a sprinkle of chives. Perfect for a summer brunch or a light dinner, this tart balances savory and fresh flavors with a beautiful golden crust.

Ingredients

Scale

Puff Pastry Base

  • 1 (8 ounces) sheet puff pastry, thawed

Spread

  • 1/4 cup crème fraîche
  • 1 1/2 tablespoons wholegrain mustard
  • 2 teaspoons chopped chives
  • 1 teaspoon sea salt
  • Pinch of freshly ground black pepper

Toppings

  • 3 to 4 small tomatoes, sliced
  • 10 cherry tomatoes, halved
  • Optional: chopped chives to garnish

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to prepare for baking the tart.
  2. Roll out the puff pastry: On a piece of parchment paper, roll out the thawed puff pastry to form a 10×12 inch rectangle, ensuring an even surface.
  3. Prepare the pastry on the baking sheet: Transfer the parchment with the puff pastry onto a baking sheet and prick the pastry all over with a fork to prevent excessive puffing during baking.
  4. Make the creamy spread: In a small bowl, combine the crème fraîche, wholegrain mustard, sea salt, and freshly ground pepper until well mixed.
  5. Spread the mixture on the pastry: Evenly spread the crème fraîche mixture over the puff pastry, leaving a 1/2 inch border around the edges to contain the topping.
  6. Add the tomatoes: Arrange the sliced small tomatoes and halved cherry tomatoes evenly over the spread-covered pastry.
  7. Bake the tart: Place the baking sheet in the oven and bake the tart for 30 to 35 minutes, or until the pastry is golden brown and crisp.
  8. Cool and garnish: Allow the tart to cool slightly, then garnish with additional chopped chives and a light sprinkle of sea salt if desired before slicing and serving.

Notes

  • Ensure the puff pastry is thoroughly thawed for easy rolling and even baking.
  • You can substitute crème fraîche with sour cream or Greek yogurt for a similar tangy flavor.
  • Adjust the amount of mustard to taste, depending on your preference for sharpness.
  • Use ripe, but firm tomatoes to avoid sogginess in the tart.
  • Serve warm or at room temperature for best flavor.
