Description

This simple and flavorful Feta Eggs recipe features a runny egg cooked surrounded by crumbly feta cheese, served atop a toasted corn tortilla spread with ripe avocado.   • pinch of salt and pepper

Tortilla and Topping

  2. Add the Egg: Crack the egg and carefully pour it into the middle of the feta ring. This ensures the egg cooks evenly surrounded by the feta.
  3. Season and Cook: Sprinkle salt, pepper, and red pepper flakes over the egg. Cover the pan with a lid and cook for 3 to 5 minutes depending on how runny you like your yolk.
  4. Toast the Tortilla: While the egg cooks, warm the corn tortilla in a separate skillet or directly over a gas stove flame until slightly toasted and pliable.
  5. Prepare the Base: Remove the tortilla from heat and smash the ripe avocado evenly across the surface in a thin layer to create a creamy base.
  6. Assemble and Finish: Carefully transfer the cooked feta egg onto the avocado-spread tortilla. Optionally, squeeze fresh lime juice on top to brighten the flavors.
