Description

This flavorful Fajita Chicken Casserole combines tender shredded chicken with sautéed bell peppers and onions, creamy sour cream, melted cheeses, and zesty diced tomatoes with green chilies. Baked to bubbly perfection, this easy Mexican-inspired dish makes a satisfying and wholesome dinner that’s perfect served over rice, in tortillas, or with tortilla chips.

  • 2 cups cooked shredded or diced chicken
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Vegetables

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • Chopped fresh cilantro for garnish (optional)

  • 1 tablespoon fajita seasoning

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the casserole at the end.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced bell peppers and red onion. Sprinkle fajita seasoning, salt, and pepper over the vegetables. Sauté for 5–6 minutes until slightly tender but still crisp.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked shredded chicken, sautéed vegetables, sour cream, drained diced tomatoes with green chilies, and half of the shredded cheddar and Monterey Jack cheese. Stir thoroughly until all ingredients are well incorporated.
  4. Assemble Casserole: Grease a 9×13-inch baking dish and transfer the chicken mixture into it. Spread it out evenly to form a uniform layer.
  5. Add Cheese Topping: Sprinkle the remaining cheddar and Monterey Jack cheese evenly over the top of the casserole.
  6. Bake: Place the casserole in the preheated oven and bake for 20–25 minutes, until the cheese is melted, bubbly, and has a light golden color.
  7. Rest and Garnish: Remove from oven and allow the casserole to rest for 5 minutes before garnishing with chopped fresh cilantro if desired. Serve warm.

  • For a low-carb option, skip serving with rice and consider adding extra vegetables.
