  • 1 zucchini, diced

Liquids & Canned Goods

  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth

Spices & Seasonings

  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Sauté Vegetables: In a large pot, heat a small amount of oil over medium heat. Add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté the mixture until the vegetables are softened and fragrant, about 5-7 minutes.
  2. Add Remaining Ingredients: Stir in the diced zucchini, canned diced tomatoes with their juice, vegetable broth, dried thyme, salt, and pepper. Mix everything thoroughly to combine flavors.
  3. Simmer Soup: Bring the soup to a boil over high heat, then reduce the heat to low. Cover and let it simmer gently for 20 minutes, allowing the flavors to meld and the vegetables to fully cook.
