- 4 cups vegetable broth
Spices & Seasonings
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Sauté Vegetables: In a large pot, heat a small amount of oil over medium heat. Add the chopped onion, sliced carrots, chopped celery, and minced garlic. Sauté the mixture until the vegetables are softened and fragrant, about 5-7 minutes.
- Add Remaining Ingredients: Stir in the diced zucchini, canned diced tomatoes with their juice, vegetable broth, dried thyme, salt, and pepper. Mix everything thoroughly to combine flavors.
