Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and place the oven rack in the middle position to ensure even cooking.
  2. Cook the Ground Beef: Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking the meat apart as it cooks until browned.
  3. Add Seasonings and Onion: Stir in the chopped onion, chili powder, garlic powder, and ground cumin. Continue cooking for another 5 minutes until the onion softens and the spices are fragrant.
  4. Prepare the Casserole Base: Spread the crushed Doritos evenly across the bottom of a 9×13-inch casserole dish to form the crunchy base layer.
  5. Combine Beef Mixture with Beans and Corn: If there is excess fat in the skillet, carefully spoon most of it out. Then stir in the drained black beans, corn, salsa, and half of the shredded cheese. Stir until the cheese melts and the mixture is warmed through.
