Pickle Base
- 1 cup dill pickle juice (from a jar of pickles)
- 1½ cups chopped dill pickles
- ½ cup white vinegar

- 3–4 jalapeños, chopped, seeds removed for less heat
- 2 cloves garlic, chopped
- 1 tablespoon fresh dill or 1 teaspoon dried dill
- ½ teaspoon onion powder
- ½ teaspoon mustard seeds (optional)
- ½ teaspoon sugar (optional, to balance acidity)
- ¼ teaspoon salt
Finishing
- 2 tablespoons olive oil
Instructions
- Combine Ingredients: In a saucepan over medium heat, combine the dill pickle juice, white vinegar, chopped pickles, jalapeños, garlic, dill, onion powder, mustard seeds, sugar (if using), and salt. Stir well to mix all ingredients uniformly.
- Simmer Mixture: Bring the mixture to a gentle simmer and cook for 8–10 minutes, until the jalapeños have softened and the flavors meld together. Stir occasionally to prevent sticking.
- Cool & Blend: Remove the saucepan from heat and let the mixture cool slightly. Transfer it to a blender or food processor, add the olive oil, and blend until smooth. Add one or two tablespoons of water if needed to reach your preferred consistency.
- Adjust Seasoning: Taste the sauce and adjust the seasoning if necessary by adding more vinegar for tanginess, more salt for bite, or additional pickle juice for enhanced flavor.
- Store & Serve: Pour the finished hot sauce into sterilized glass bottles or jars. Store in the refrigerator for up to 2 weeks. Shake well before each use for best texture and flavor.
