Potatoes:
- 1 1/2 pounds Yukon gold or red potatoes, diced into 1/2-inch cubes
Seasonings:

- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional:
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and grease a large baking dish or sheet pan.
- Prepare the chicken and potatoes: In a bowl, combine chicken and potatoes. Drizzle with olive oil and season with garlic powder, paprika, thyme, onion powder, salt, and pepper. Toss to coat.
- Bake: Spread the mixture in the baking dish. Bake for 35–40 minutes, stirring halfway, until potatoes are tender and chicken is cooked. Add cheese in the last 5 minutes if desired.
- Serve: Garnish with parsley before serving.
