Description

These Decadent Buckeye Graham Crackers are a delightful treat featuring creamy peanut butter filling sandwiched between graham cracker halves, then topped with smooth, melted chocolate. Perfectly sweet and crunchy, these no-bake sandwiches are easy to make and great for holidays or anytime indulgence.

Ingredients

Scale

Peanut Butter Filling

  • 1 cup creamy peanut butter (240g)
  • 4 tablespoons salted butter, melted (56g)
  • 1 cup powdered sugar (120g)
  • ¼ teaspoon kosher salt

Sandwiches

  • 12 full graham crackers, broken in half (24 squares)

Chocolate Coating

  • 1 cup chocolate chips (170g)
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. Prepare the Peanut Butter Filling: In a bowl, thoroughly mix the creamy peanut butter, melted salted butter, powdered sugar, and kosher salt until the mixture is smooth, thick, and well combined.
  2. Break Graham Crackers: Carefully break the 12 full graham crackers in half to create 24 squares for assembling the sandwiches.
  3. Assemble the Sandwiches: Spread an even layer of the peanut butter filling onto 12 of the graham cracker squares, then top each with one of the remaining 12 squares to form sandwich cookies.
  4. Freeze the Sandwiches: Place the assembled sandwiches on a parchment-lined tray and freeze them for 10 to 15 minutes to firm up the filling, making them easier to dip.
  5. Melt the Chocolate: Combine the chocolate chips and optional coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring between each, until the chocolate is completely melted and smooth.
  6. Dip the Sandwiches: Remove the sandwiches from the freezer and dip the tops of each sandwich into the melted chocolate, coating evenly.
  7. Set the Chocolate: Return the chocolate-coated sandwiches to the parchment-lined tray. Optionally, sprinkle with sea salt or crushed graham crackers for extra flavor and texture.
  8. Chill Until Firm: Refrigerate or freeze the sandwiches for another 10 to 15 minutes until the chocolate topping is fully set and firm.

Notes

  • For a smoother chocolate coating, adding coconut oil is optional but recommended.
  • You can sprinkle the dipped chocolate with sea salt or crushed graham crackers for added texture and flavor contrast.
  • Store finished buckeye graham crackers in an airtight container in the refrigerator for up to a week or freeze for longer storage.
  • Be sure the peanut butter mixture is thick enough to hold together when spread; adjust powdered sugar quantity slightly if needed.
