Instructions
- Prepare the Peanut Butter Filling: In a bowl, thoroughly mix the creamy peanut butter, melted salted butter, powdered sugar, and kosher salt until the mixture is smooth, thick, and well combined.
- Break Graham Crackers: Carefully break the 12 full graham crackers in half to create 24 squares for assembling the sandwiches.
- Assemble the Sandwiches: Spread an even layer of the peanut butter filling onto 12 of the graham cracker squares, then top each with one of the remaining 12 squares to form sandwich cookies.
- Freeze the Sandwiches: Place the assembled sandwiches on a parchment-lined tray and freeze them for 10 to 15 minutes to firm up the filling, making them easier to dip.
- Melt the Chocolate: Combine the chocolate chips and optional coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring between each, until the chocolate is completely melted and smooth.
