- 2 pounds boneless skinless chicken breasts
- Kosher salt and freshly ground black pepper, to taste
- 1 teaspoon cumin
- 1 teaspoon chili powder
Main Ingredients
- 15 oz can black beans, drained and rinsed
- 10 oz can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 cup frozen corn
- 1 cup salsa
- 1/2 cup red onion, diced
- 4 cloves garlic, minced
Fresh Ingredients
- Juice of 1 lime
- 1/2 cup chopped fresh cilantro leaves
Instructions
- Prepare and season the chicken: Place the boneless skinless chicken breasts into your crockpot. Season the chicken generously with kosher salt and freshly ground black pepper. Sprinkle cumin and chili powder evenly over the top of the chicken breasts to infuse them with warm, smoky flavors.
- Add remaining ingredients: Layer the black beans (drained and rinsed), Ro*Tel diced tomatoes with mild green chilies, frozen corn, salsa, diced red onion, minced garlic, fresh lime juice, and chopped cilantro over the chicken in the crockpot.
- Mix and cook: Gently mix all ingredients together to combine without disturbing the chicken too much. Cover the crockpot with the lid and cook on HIGH for 4 hours or on LOW for 6 to 7 hours, allowing the flavors to meld and the chicken to become tender and juicy.
- Shred and serve: Once cooked, remove the lid and use two forks to shred the chicken directly in the crockpot. Stir to incorporate the shredded chicken with the flavorful mixture. Serve hot, garnished with slices of avocado, a lime wedge, a dollop of sour cream, and a touch of additional salsa if desired.
