  • 1 cup chopped yellow onion (1 small onion)
  • 4 cups cauliflower florets (1 large cauliflower)
  • 2 cups broccoli florets
  • 2 cups chopped carrots
  • 1 cup frozen corn

  • 10 cups vegetable broth

  • ½ tablespoon dried garlic
  • ½ tablespoon dried parsley
  • ½ tablespoon dried thyme
  • ½ tablespoon dried Italian seasoning
  • ½ teaspoon black pepper


Instructions

  1. Combine Ingredients: In a 6-quart Dutch oven or large pot, place all the chopped vegetables along with the vegetable broth to prepare the base of the soup.
  2. Add Spices: Add the dried garlic, parsley, thyme, Italian seasoning, and black pepper to the pot. Stir well to evenly distribute the spices throughout the broth and vegetables.
  3. Simmer: Bring the mixture to a boil over medium-high heat, then reduce the heat to low so the soup simmers. Cover the pot partially with a lid to allow steam to escape and help the liquid reduce slightly. Let it cook for 45 to 60 minutes or until all the vegetables become tender and soft.
  4. Blend the Soup: Using an immersion blender, blend the soup directly in the pot until it reaches a smooth and creamy consistency. Make sure all vegetable chunks are fully pureed.
  5. Adjust Consistency: If the soup is too thick after blending, add additional liquid such as water, milk, or extra vegetable or chicken broth gradually, stirring until you achieve your preferred texture.

Notes

  • Use fresh vegetables for better flavor and texture, but frozen can be substituted where indicated.
  • Partial lid covering allows some evaporation which concentrates flavors without losing too much moisture.
