Description

This Creamy Tuscan Salmon recipe delivers a rich and flavorful dinner featuring tender salmon fillets cooked to perfection and served with a luscious sauce of sun-dried tomatoes, fresh baby spinach, cream, and aromatic herbs. Quick to prepare and perfect for a weeknight meal, this dish combines Mediterranean-inspired flavors with a creamy, comforting texture.

Ingredients

Scale

Salmon

  • 1 pound fresh salmon (cut into 4 pieces)
  • Salt & pepper (to taste)
  • 1/4 teaspoon garlic powder
  • Flour (for dredging)

Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup chicken broth or dry white wine
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes
  • 1 cup heavy/whipping cream
  • 1-2 cups (packed) fresh baby spinach
  • 1 tablespoon fresh basil (sliced thin)
  • Freshly grated parmesan cheese (for serving)

Instructions

  1. Prep the salmon: Sprinkle each salmon piece on both sides with salt, pepper, and garlic powder. Then coat them evenly by dredging in flour.
  2. Sear the salmon: Heat olive oil and butter in a skillet over medium-high heat. When hot, add salmon fillets and cook 3-4 minutes per side until a golden crust forms, but the salmon is not fully cooked yet. Remove from pan and set aside.
  3. Create the sauce base: Add chicken broth (or white wine), lemon juice, and sun-dried tomatoes to the same skillet. Let it simmer and bubble for a couple of minutes to combine flavors.
  4. Add cream: Stir in the heavy cream and cook for a few more minutes until the sauce begins to thicken slightly.
  5. Incorporate spinach and finish cooking: Reduce heat to medium-low and add fresh baby spinach to the skillet. Allow it to wilt, about 30 seconds, then return the salmon to the pan. Cook together for a few more minutes until the salmon is fully cooked and the sauce has thickened.
  6. Garnish and serve: Plate the salmon and spoon the creamy sauce over it. Top with sliced fresh basil and freshly grated parmesan cheese to enhance the flavors before serving.

Notes

  • You can substitute chicken broth with dry white wine for a different flavor profile.
  • Ensure not to overcook the salmon during the searing stage to keep it tender inside.
  • Use packed fresh baby spinach for better texture and flavor.
  • Freshly grated parmesan cheese adds a subtle salty depth to the rich sauce.
