- 1/4 cup sun-dried tomatoes
- 1 cup heavy/whipping cream

- 1 tablespoon fresh basil (sliced thin)
- Freshly grated parmesan cheese (for serving)
Instructions
- Prep the salmon: Sprinkle each salmon piece on both sides with salt, pepper, and garlic powder. Then coat them evenly by dredging in flour.
- Sear the salmon: Heat olive oil and butter in a skillet over medium-high heat. When hot, add salmon fillets and cook 3-4 minutes per side until a golden crust forms, but the salmon is not fully cooked yet. Remove from pan and set aside.
- Create the sauce base: Add chicken broth (or white wine), lemon juice, and sun-dried tomatoes to the same skillet. Let it simmer and bubble for a couple of minutes to combine flavors.
- Add cream: Stir in the heavy cream and cook for a few more minutes until the sauce begins to thicken slightly.
- Incorporate spinach and finish cooking: Reduce heat to medium-low and add fresh baby spinach to the skillet. Allow it to wilt, about 30 seconds, then return the salmon to the pan. Cook together for a few more minutes until the salmon is fully cooked and the sauce has thickened.
- Garnish and serve: Plate the salmon and spoon the creamy sauce over it. Top with sliced fresh basil and freshly grated parmesan cheese to enhance the flavors before serving.
