Description

This creamy chicken spaghetti is a comforting and hearty baked pasta dish featuring tender shredded chicken, a rich creamy sauce made with cream of chicken and mushroom soups, and plenty of melted cheddar cheese. It’s perfect for an easy weeknight dinner that the whole family will love.

Sauce & Chicken

  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups cooked shredded chicken (rotisserie or boiled)
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided

Seasonings

  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)

Garnish (optional)

  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the assembled dish.
  2. Sauté Onion and Garlic: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma.
  3. Prepare Sauce: Into the skillet, add the cooked shredded chicken, cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, 1 1/2 cups of shredded cheddar cheese, paprika, garlic powder, black pepper, salt, and cayenne pepper if using. Stir everything thoroughly until well combined and heat through gently.
  4. Combine with Spaghetti: Add the cooked and drained spaghetti to the skillet. Toss everything together to evenly coat the pasta with the creamy chicken sauce.
  5. Assemble in Baking Dish: Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly to prepare for baking.
  6. Add Topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the dish.
  7. Bake: Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the casserole is hot, bubbly, and the cheese topping is melted and slightly golden.
