  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Make the choux pastry: Combine butter, water, salt, and sugar in a saucepan. Boil, remove from heat, add flour, return to heat, stir until smooth. Cool slightly, then beat in eggs one at a time until glossy.
  3. Bake the pastry: Pipe mounds of dough onto the baking sheet and bake for 25–30 minutes until golden brown. Cool on a wire rack.
  4. Prepare the filling: Heat milk, whisk sugar, cornstarch, and yolks. Combine, cook until thickened, then add butter and vanilla. Chill.
