Description

Salmon:

  • 4 salmon fillets (6 oz each, skin removed)

Stuffing:

  • 4 oz lump crab meat
  • 4 oz cooked small shrimp (chopped)
  • 3 oz cream cheese (softened)
  • 2 tablespoons mayonnaise
  • 1/2 cup shredded mozzarella or Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • Salt and black pepper to taste

Other:

  • 1 tablespoon olive oil

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare stuffing: In a medium bowl, combine crab meat, chopped shrimp, cream cheese, mayonnaise, mozzarella or Parmesan, lemon juice, Old Bay seasoning, garlic powder, onion powder, parsley, salt, and pepper.
  3. Fill salmon: Cut a pocket in each salmon fillet, fill with seafood mixture, drizzle with olive oil, season, and place in baking dish.
  4. Bake: Bake for 18–22 minutes until salmon is cooked and filling is golden.
  5. Serve: Garnish with parsley and lemon wedges before serving.
