Spicy Peanut Dressing

  • 3 tablespoons peanut butter

  • 1 teaspoon soy sauce

Instructions

  1. Cook the soba noodles: Follow the package instructions to cook the soba noodles until tender. Once cooked, rinse them thoroughly under cold water to stop the cooking process and remove excess starch. Drain well and set aside to cool.
  2. Prepare the vegetables and dressing: Chop the red bell pepper, grate the carrot, finely chop the chives or scallions, and cilantro. In a small bowl, whisk together the peanut butter, sesame oil, hoisin sauce, sriracha sauce, lime juice, soy sauce, minced garlic, grated ginger, and water until smooth.
  3. Combine the ingredients: In a large mixing bowl, add the cooled soba noodles, chopped vegetables, and chopped peanuts. Pour the spicy peanut dressing over the mixture and toss thoroughly using tongs or a large spoon to ensure every ingredient is well coated.
