Dough:
- 1 cup unsalted butter (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour

Coating:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat the Oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream together softened butter and powdered sugar until light and fluffy. Mix in vanilla extract.
- Add Dry Ingredients: Add flour, salt, and ground cinnamon, and mix until combined. Stir in chopped nuts if using.
- Shape Dough: Scoop out tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet about 1 inch apart.
- Bake: Bake for 12–14 minutes or until the bottoms are lightly golden but the tops remain pale.
- Coat with Cinnamon Sugar: While cookies are still warm, gently roll them in the cinnamon sugar mixture (combine 1/2 cup granulated sugar with 1 tablespoon cinnamon). Let cool completely, then roll again for a thicker coating if desired.
Notes
- For a nut-free version, omit the nuts without affecting texture.
- You can also use a cookie scoop for uniform size.
