Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg until evenly combined.
- Combine wet ingredients: In a large bowl, beat the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract together until the mixture is smooth and well combined.
- Incorporate dry into wet: Stir the dry ingredient mixture into the wet ingredients just until blended. Avoid over-mixing to keep the bread tender.
- Fold in apples and nuts: Gently fold in the peeled, finely chopped apples and the chopped walnuts or pecans if using, distributing them evenly throughout the batter.
