Scale
Main Ingredients
- 8 oz spaghetti or rice noodles
- 2 tablespoons olive oil or butter
- 3 cloves garlic, minced
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- ½ cup chopped fresh cilantro
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- ¼ cup grated Parmesan or Cotija cheese (optional)
- Extra lime wedges for serving
Instructions
- Cook Noodles: Cook noodles according to package instructions until al dente. Drain them well, reserving about ¼ cup of the pasta water for later use.
- Sauté Garlic: In a large skillet over medium heat, heat the olive oil or butter. Add minced garlic and sauté for 30 to 60 seconds until fragrant but not browned, stirring continuously to prevent burning.
- Add Lime and Spices: Stir in the lime zest, fresh lime juice, and red pepper flakes if using. Mix well to combine the flavors.
- Toss Noodles: Add the cooked noodles back into the skillet along with the reserved pasta water. Toss thoroughly to coat the noodles evenly with the lime garlic sauce.
- Add Cilantro and Season: Stir in the chopped cilantro, then season with salt and black pepper according to your taste. Remove the pan from heat.
- Serve: Serve the noodles warm, topped with grated Parmesan or Cotija cheese if desired. Offer extra lime wedges on the side for an additional citrus boost.
