Ingredients
Scale
Vegetables
- 1 head broccoli, cut into bite-sized florets
- 15 oz bag sugar snap peas
- 1 cup baby carrots
- 1 English cucumber, cut into 2-inch sticks (batonnet cut)
- 1 red bell pepper, sliced into strips
- 1 head cauliflower, cut into bite-sized florets
Garnish
- 1 slice cheddar cheese, cut into a star shape
Serving
- Your favorite dip (e.g., Healthy Yogurt Ranch or Easy Hummus) for serving
Instructions
- Prep & cut the veggies: Cut the broccoli and cauliflower into bite-sized florets. Batonnet cut the cucumber into 2-inch sticks for a cohesive tree shape, or simply slice if preferred. Slice the red bell pepper into strips. Carefully cut the cheddar cheese slice into a star shape to use as the tree topper. This step adds a festive touch but is optional.
- Assemble the tree base: Arrange all the green vegetables—broccoli, sugar snap peas, and cucumber sticks—into a tree shape on your serving platter. Start building from the bottom; broccoli works well at the top and bottom layers because it holds shape nicely. Layer the vegetables as necessary to create a full and festive green tree.
- Add the trunk and decorations: Use baby carrots to form the tree trunk at the base of the tree. Surround the carrot stump with cauliflower to resemble snow. Decorate the tree by adding red bell pepper strips as ornaments. Finally, place the cheddar cheese star on top of the tree to finish the look.
- Serve with dip: Present the veggie tree with your favorite dip such as Healthy Yogurt Ranch or Easy Hummus for a delightful and healthy holiday appetizer.
Notes
- You can customize the veggie decorations by adding other colorful vegetables like cherry tomatoes or radishes.
- Batonnet cut means cutting vegetables into sticks about 2 inches long and 1/4 inch thick.
- The cheese star is optional but adds a nice festive touch to the tray.
- Best served fresh with a cold dip; cover and refrigerate if prepping earlier.
