Ingredients
Scale
Eggs
- 6 hard-boiled eggs
Avocado Filling
- 1 ripe avocado
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons chopped chives or green onions
Decorations
- 2 tablespoons pomegranate seeds or finely diced cherry tomatoes
- 1 teaspoon black sesame seeds or poppy seeds
Instructions
- Prepare the eggs: Hard boil the eggs for about 10-12 minutes until firm but not overcooked. Then cool, peel, and slice each egg in half lengthwise, carefully removing the yolks and setting the whites aside intact.
- Make the avocado filling: In a bowl, mash together the egg yolks, ripe avocado, lemon juice, Dijon mustard, salt, and pepper until smooth and creamy. Fold in the chopped chives or green onions gently for a fresh flavor.
- Fill the egg whites: Using a small spoon or a piping bag fitted with a star tip, fill each egg white half generously with the avocado mixture. Sculpt the filling into a triangular shape resembling a Christmas tree by smoothing and shaping the edges.
- Add festive toppings: Sprinkle black sesame seeds or poppy seeds over the avocado filling to mimic garlands. Then decorate the ‘trees’ by placing pomegranate seeds or finely diced cherry tomatoes to look like bright ornaments.
- Chill and serve: Refrigerate the finished deviled eggs for at least 30 minutes before serving to allow flavors to meld and keep the avocado filling fresh and firm.
Notes
- Use ripe but firm avocados to ensure a creamy yet stable filling.
- For easier peeling, place eggs in ice-cold water immediately after boiling.
- Adjust the amount of lemon juice to prevent avocado browning.
- Experiment with different toppings like finely diced bell peppers or herbs for variety.
- Serve chilled for best flavor and texture.
