Description

Delightfully festive and easy-to-make Chocolate-Dipped Easter Rice Krispie Treats that combine classic marshmallow cereal squares with rich dark and white chocolate coatings, perfect for spring celebrations or a fun, sweet snack.

Ingredients

Scale

Base

  • 8 tablespoons butter
  • 16 cups mini marshmallows (divided: 12 cups and 4 cups)
  • 10 cups Rice Krispies cereal
  • ½ teaspoon salt

Chocolate Coating

  • 6 ounces high-quality dark chocolate
  • 6 ounces high-quality white chocolate

Optional Garnish

  • Sprinkles

Instructions

  1. Prepare the Pan: Line a 9×13-inch pan with foil and lightly grease it with cooking spray to ensure the treats don’t stick.
  2. Melt Butter and Marshmallows: In a large pot over low heat, melt the butter. Add 12 cups of mini marshmallows and stir continuously until fully melted and smooth.
  3. Mix in Cereal and Remaining Marshmallows: Remove the pot from heat, then stir in the salt and 10 cups of Rice Krispies cereal until evenly coated. Add the remaining 4 cups of mini marshmallows and mix well until fully combined.
  4. Press Into Pan and Cool: Transfer the mixture into the prepared pan. Using parchment paper sprayed with non-stick spray, press the mixture evenly and firmly into the pan. Allow the treats to cool completely at room temperature.
  5. Cut Into Squares: Once fully cooled, cut the rice krispie treats into 20-24 squares, depending on your desired size.
  6. Set Up Double Boiler and Melt Chocolates: Prepare two pots with about 1 inch of simmering water each. Place a heat-safe bowl over each pot. In one bowl, melt the dark chocolate slowly while stirring until smooth. Repeat with the white chocolate in the other bowl.
  7. Dip and Decorate: Dip each Rice Krispie square halfway into either the melted dark or white chocolate. Let excess chocolate drip off. Insert a popsicle stick into each treat, then add sprinkles if desired for a festive touch.
  8. Set Chocolate: Place the dipped squares on wax paper or a cooling rack and allow the chocolate to set completely at room temperature before serving.

Notes

  • Ensure marshmallows are melted over low heat to prevent burning or clumping.
  • Using high-quality chocolate enhances flavor and smoothness.
  • If desired, refrigeration can speed up chocolate setting but might add condensation.
  • Sprinkles are optional, but they add a fun decorative Easter touch.
  • For easier dipping, warm the chocolate gently to maintain a smooth consistency.
  • Store treats in an airtight container to maintain freshness.
