Description

A flavorful and zesty Chipotle Corn Salsa inspired by the popular restaurant version, featuring fresh corn, zesty lime and lemon juice, and a smoky blend of spices. Perfect as a side dish, dip, or topping for tacos and grilled meats.

Ingredients

Scale

Ingredients

  • 1 (15.25-ounce) can corn, drained
  • ¼ cup cilantro, finely chopped
  • ¼ cup red onion, finely diced
  • 1 jalapeño, seeded and finely diced
  • 2 tablespoons lime juice (from 1 lime)
  • 1 tablespoon lemon juice (from 1 lemon)
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine ingredients: In a large mixing bowl, add the drained corn, finely chopped cilantro, finely diced red onion, and seeded, finely diced jalapeño.
  2. Add dressings and spices: Pour in the lime juice and lemon juice, then sprinkle in the ground cumin, paprika, salt, and black pepper. Gently toss all ingredients together until just combined and evenly mixed.

Notes

  • For extra heat, leave the jalapeño seeds in or add more jalapeño.
  • Use fresh or frozen corn if canned corn is unavailable.
  • Adjust seasoning to taste, especially the salt and lime juice for brightness.
  • This salsa pairs well with grilled meats, tacos, or as a dip with tortilla chips.
  • Best served chilled or at room temperature.
