Tender, marinated chicken cubes grilled to perfection and served alongside oven-baked seasoned fries topped with salty feta cheese and fresh herbs, complemented by a creamy homemade tzatziki sauce.

Ingredients

Scale

Chicken Skewers

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Tzatziki Sauce

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped

Feta Fries

  • 4 medium potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the Oven. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat to prepare for the fries.
  2. Prepare the Fries. Wash and peel the potatoes, then cut them into thin fries approximately 1/4 to 1/2 inch thick for even baking.
  3. Season the Fries. Place the cut fries into a large bowl and drizzle with two tablespoons of olive oil, then sprinkle with dried oregano, garlic powder, salt, and black pepper. Toss thoroughly to coat evenly.
  4. Bake the Fries. Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  5. Cut and Marinate Chicken. While fries bake, cut chicken breasts into 1 to 1 1/2 inch cubes. In a medium bowl, mix olive oil with garlic powder, onion powder, paprika, dried oregano, ground cumin, salt, and black pepper. Add chicken cubes and toss to fully coat.
  6. Skewer the Chicken. Thread the marinated chicken cubes onto skewers, packing them closely together to ensure even cooking.
  7. Grill the Chicken. Heat a grill pan or outdoor grill over medium-high heat. Cook chicken skewers for 4-5 minutes per side until fully cooked and charred, reaching an internal temperature of 165°F (74°C).
  8. Prepare Tzatziki Sauce. In a small bowl, combine Greek yogurt, lemon juice, and chopped dill. Stir until smooth and adjust seasoning to taste.
  9. Finish the Fries. Remove fries from oven and let cool slightly. Sprinkle crumbled feta cheese and fresh parsley over the hot fries for added flavor.
  10. Serve. Serve grilled chicken skewers alongside feta fries with a generous side of tzatziki sauce for dipping, creating a balanced and flavorful meal.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes or up to 2 hours before grilling.
  • You can substitute skewers for a grill basket if preferred.
  • Use fresh potatoes for best crispiness; soaking fries in water before baking can help remove excess starch if desired.
  • The tzatziki sauce can be made ahead and refrigerated for up to 24 hours to enhance flavors.
  • Ensure skewers are soaked in water if using wooden ones to prevent burning on the grill.
  • Adjust seasoning levels based on personal preference, especially salt and spices.
