Instructions
- Preheat and prepare: Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish to prevent sticking.
- Sauté vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced bell peppers and red onion and sauté until tender-crisp, about 5 to 6 minutes. Season with salt, pepper, and half of the fajita seasoning to infuse flavor.
- Combine ingredients: In a large mixing bowl, combine the shredded chicken, sautéed vegetables, softened cream cheese, sour cream, drained diced tomatoes with green chilies, and the remaining fajita seasoning. Mix thoroughly until all ingredients are well incorporated.
- Assemble casserole: Spread the chicken and vegetable mixture evenly into the prepared baking dish. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly on top.
