Description

  • 4 boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 slices ham
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

For the Dijon Cream Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Pound the chicken: Pound the chicken breasts between two pieces of plastic wrap to about ¼-inch thickness. Season with salt and pepper.
  3. Fill and roll: Lay ham and Swiss cheese on each chicken breast. Roll tightly, secure with toothpicks.
  4. Dredge: Coat rolled chicken in flour, egg, then breadcrumbs.
  5. Sear and bake: Sear in a skillet, then bake in the oven until cooked.
  6. Make sauce: Prepare the Dijon cream sauce in a saucepan.
  7. Serve: Drizzle sauce over sliced chicken before serving.
