Cheese and Bread

- 1 tablespoon Dijon mustard

Instructions
- Prepare and cook the chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a non-stick skillet over medium-high heat. Cook the chicken breasts for 6 to 7 minutes per side, or until they are fully cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest briefly before slicing it into thin pieces.
- Prepare avocado and cheese: Slice the avocado thinly and set aside. Gather your choice of cheese slices—Swiss, cheddar, or provolone work best for melting.
- Apply spreads to bread: Spread mayonnaise evenly on one side of each bread slice, then add a layer of Dijon mustard over the mayonnaise for a tangy kick.
- Assemble the sandwiches: On the mayonnaise and mustard coated side of two bread slices, layer the sliced cooked chicken, avocado slices, cheese, and optional red onion and tomato slices. Top each with the remaining bread slices, spread side down.
- Grill the sandwiches: Heat butter or olive oil in a skillet over medium heat. Place the assembled sandwiches in the pan and grill for about 3 to 4 minutes per side until the bread is golden brown and the cheese has melted completely.
