Ingredients
Scale
Lasagna Rolls
- 8 lasagna noodles
- 2 cups cooked shredded chicken
- 2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Sauce
- 2 cups Alfredo sauce (store-bought or homemade)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking during baking.
- Cook Noodles: Cook the lasagna noodles according to the package directions until al dente. Drain the noodles and lay them flat on a sheet of parchment paper to cool slightly, preventing them from sticking together.
- Make Filling Mixture: In a large bowl, combine the shredded chicken, ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, egg, chopped parsley, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Assemble Rolls: Spread about 2 tablespoons of the chicken mixture evenly over each cooled lasagna noodle. Carefully roll up each noodle tightly and place them seam-side down in the prepared baking dish to hold their shape during baking.
- Add Sauce and Cheese: Pour the Alfredo sauce evenly over the top of the lasagna rolls. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese evenly over the sauce-covered rolls.
- Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 20 minutes to heat through and allow flavors to meld.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes or until the cheese on top is melted, bubbly, and slightly golden.
- Rest and Serve: Let the lasagna rolls rest for 5 minutes after removing from the oven. Garnish with additional fresh parsley if desired before serving.
Notes
- For added flavor, substitute the Alfredo sauce with garlic or roasted red pepper Alfredo sauce.
- Rotisserie chicken is a great shortcut for quick preparation.
- You can assemble these rolls ahead of time and refrigerate; bake them the next day for convenience.
