Ingredients
For the Steak:
1 1/2 pounds flank or skirt steak; 1 tablespoon olive oil; 1 teaspoon chili powder; 1 teaspoon cumin; 1/2 teaspoon paprika; 1/2 teaspoon garlic powder; 1/2 teaspoon onion powder; Salt and pepper to taste;
For the Rice:
2 cups cooked white rice; 1/2 cup chopped fresh cilantro; Juice of 1 lime; 1 tablespoon butter;
Additional Ingredients:
1 cup shredded cheddar cheese; 1 cup shredded Monterey Jack cheese; 1 cup black beans, drained and rinsed; 1 cup corn kernels (fresh, canned, or thawed from frozen); 1/2 cup sour cream; 1/2 cup salsa or pico de gallo; 4–6 large flour tortillas
Instructions
- Prepare the Steak: Mix spices and rub onto steak. Marinate. Cook and slice.
- Make the Rice: Cook rice, then mix in cilantro, lime juice, and butter.
- Assemble the Burritos: Layer rice, steak, cheeses, beans, corn, sour cream, and salsa in tortillas. Roll up tightly.
- Optional: Sear burritos in a skillet for a crispy finish.
- Serve warm.
