Description

This Cheesy Hamburger Rice Casserole is a hearty and comforting dish that combines ground beef, creamy mushroom soup, diced tomatoes, and tender rice, all topped with melted mozzarella cheese. Perfect for a quick weeknight meal, it simmers on the stovetop and finishes under the broiler for a cheesy, bubbly crust.

Ingredients

Scale

Meat and Dairy

  • 1 pound ground beef
  • 0.75 cup shredded mozzarella cheese

Canned Goods

  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (14.5 ounce) can diced tomatoes with juice

Grains

  • 0.5 cup long grain white rice

Seasonings

  • Salt and pepper, to taste

Instructions

  1. Brown the ground beef: Heat a skillet over medium-high heat and cook the ground beef until it is fully browned. Drain any excess grease to keep the dish from being too oily.
  2. Combine ingredients: Stir in the cream of mushroom soup, diced tomatoes with their juice, and the uncooked long grain white rice into the skillet with the beef. Mix everything until well combined.
  3. Simmer the casserole: Cover the skillet with a lid, reduce the heat to low, and let it simmer gently. Cook for about 15 minutes or until the rice is tender and has absorbed the flavors.
  4. Preheat the broiler and prepare for baking: While the casserole simmers, preheat your oven’s broiler. Once the rice is tender, transfer the mixture from the skillet into a casserole dish.
  5. Add cheese and broil: Sprinkle the shredded mozzarella cheese evenly over the top of the casserole. Place under the broiler for 3 to 5 minutes, or until the cheese is melted, bubbly, and slightly golden.
  6. Season and serve: Remove from the oven carefully, season with salt and pepper to taste, and serve warm for a delicious, comforting meal.

Notes

  • You can substitute cream of mushroom soup with cream of celery or cream of chicken soup for a different flavor.
  • Make sure to cover the skillet properly while simmering to ensure the rice cooks evenly.
  • For extra flavor, consider adding chopped onions or garlic when browning the beef.
  • Use low-fat cheese or less cheese to reduce the fat content.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
