Description

  • 1 packet taco seasoning

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) diced tomatoes with green chilies

Cheese and Garnishes

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced

Instructions

  1. Heat Oil and Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until they are lightly browned on all sides, about 5 minutes.
  2. Season Chicken: Sprinkle the taco seasoning over the cooked chicken and stir well to coat all pieces evenly with the seasoning.
  3. Add Rice and Vegetables: To the skillet, add the rice, chicken broth, drained black beans, drained corn, and diced tomatoes with green chilies. Stir everything together to combine thoroughly.
  4. Simmer the Mixture: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 18 to 20 minutes, or until the rice is tender and the liquid has been absorbed.
  5. Add Cheese and Melt: Remove the lid and sprinkle both the cheddar and Monterey Jack cheese evenly over the top of the skillet. Cover the skillet again and let it sit for about 2 minutes, allowing the cheese to melt completely.

  • You can substitute brown rice for white rice, but increase the cooking time by about 15 minutes and add extra broth as needed.
