Ingredients
Scale
Crust
- 1 1/2 cups graham cracker crumbs (or digestive biscuits)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Filling
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2/3 cup sour cream
- 2 large eggs
- 1/4 cup heavy cream
Topping (optional)
- Fresh berries
- Chocolate drizzle
- Fruit compote
Instructions
- Preheat Oven: Preheat the oven to 325°F (163°C) to prepare for baking the crust and tart.
- Make Crust Mixture: In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter; stir well until crumbs are evenly coated with butter.
- Form Crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch tart pan using the back of a spoon or your fingers to create an even crust layer.
- Bake Crust: Bake the crust for 8-10 minutes until golden brown. Remove from oven and let it cool while preparing the filling.
- Prepare Cream Cheese Filling: In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, beating until well combined and creamy.
- Mix Filling Ingredients: Add sour cream and heavy cream to the cream cheese mixture and mix until smooth. Beat in eggs one at a time, fully incorporating each before adding the next.
- Fill Tart Shell: Pour the cream cheese filling into the cooled crust and smooth the top with a spatula for an even surface.
- Bake Tart: Bake the filled tart for 45-50 minutes. The edges should be set, and the center slightly jiggly, allowing it to firm up upon cooling.
- Cool and Chill: Let the tart cool completely in the pan on a wire rack. Then refrigerate for at least 4 hours or overnight to achieve the best texture.
- Serve: Before serving, top the cheesecake tart with fresh berries, chocolate drizzle, or fruit compote as desired to enhance flavor and presentation.
Notes
- Use room temperature cream cheese to achieve a smooth filling without lumps.
- Press the crust mixture firmly to avoid cracking after baking.
- Do not overbake the tart; a slightly jiggly center ensures a creamy texture.
- Allow the tart to chill thoroughly to set properly before slicing.
- Optional toppings can be customized to your taste or seasonal availability.
