Description

A creamy and low-carb alternative to traditional mashed potatoes, this Cauliflower Mashed Potatoes recipe blends tender cauliflower with garlic, Parmesan, and cream cheese to create a smooth, flavorful side dish perfect for any meal.

Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower, cut into florets

Dairy & Fats

  • 2 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 1/4 cup whole milk (or as needed)

Seasonings

  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish (Optional)

  • Chopped fresh chives

Instructions

  1. Boil Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10–12 minutes, or until very tender. Drain thoroughly and let sit for a few minutes to release any excess moisture.
  2. Blend Ingredients: Place the cooked cauliflower, butter, minced garlic, Parmesan cheese, cream cheese, milk, salt, and pepper into a large food processor or use an immersion blender directly in the pot. Blend until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Adjust Seasoning: Taste the mashed cauliflower and adjust the seasoning by adding more salt, pepper, or milk for your preferred texture and flavor.
  4. Serve and Garnish: Transfer the mashed cauliflower to a serving bowl. Garnish with chopped fresh chives if desired. Serve warm as a delicious low-carb side dish.

Notes

  • For a dairy-free version, substitute olive oil for butter and use dairy-free alternatives for cheeses or omit them altogether.
  • If you prefer a chunkier texture, mash the cauliflower by hand instead of blending.
