Description

This Cauliflower Jalapeño Popper Casserole is a delicious and creamy low-carb dish that combines the flavors of jalapeño poppers with cauliflower and cheese. It’s a perfect side dish or main course for those following a keto or gluten-free diet.

Ingredients

Scale

Main Ingredients:

  • 1 large head cauliflower, cut into florets (about 6 cups)
  • 8 oz cream cheese, softened

Cheese Mixture:

  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Additional Ingredients:

  • 46 slices cooked bacon, chopped
  • 23 jalapeños, seeded and diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (for topping)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Prepare cauliflower: Steam or microwave cauliflower florets until tender, about 5–7 minutes. Drain and pat dry.
  3. Mix cheese: In a bowl, combine cream cheese, sour cream, cheddar, mozzarella, garlic powder, onion powder, salt, and pepper until smooth. Fold in jalapeños, bacon, and cauliflower.
  4. Bake: Spread mixture in baking dish, sprinkle with Parmesan, and bake for 25–30 minutes until golden brown. Let cool before serving. Garnish with green onions or parsley.

Notes

  • For a spicier dish, keep jalapeño seeds or add cayenne.
  • Casserole can be prepped ahead and baked later. Keto-friendly and low-carb.
