Description

This refreshing Carrot Raisin Salad is a delightful combination of sweet and savory flavors. With shredded carrots, plump raisins, and a creamy dressing, it’s perfect for picnics, potlucks, or as a side dish any time of the year.

Ingredients

Shredded Carrots:

4 cups

Raisins:

1 cup

Crushed Pineapple (drained):

1/2 cup

Mayonnaise:

1/2 cup

Honey (optional):

1 tablespoon

Salt:

1/4 teaspoon

Ground Cinnamon (optional):

1/4 teaspoon

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine shredded carrots, raisins, and crushed pineapple.
  2. Prepare Dressing: In a separate small bowl, whisk together mayonnaise, honey (if using), salt, and cinnamon until smooth.
  3. Toss and Chill: Pour the dressing over the carrot mixture and toss until well coated. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend. Serve chilled.

Notes

  • For a lighter version, substitute Greek yogurt for half or all of the mayonnaise.
  • Add chopped walnuts or sunflower seeds for extra crunch.
  • Golden raisins can be used for a slightly different flavor and color.
