- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Caramelize the Onions: In a large skillet, heat olive oil and butter. Add onions, salt, pepper, and thyme. Cook until caramelized, then stir in balsamic vinegar.
- Prepare the Pastry: Roll out puff pastry, score a border, brush with egg wash, spread caramelized onions, and top with Gruyere.
- Bake: Bake for 20–25 minutes until golden and crisp. Garnish with thyme before serving.
