Instructions
- Cook the Grits: In a saucepan over medium heat, combine the milk, water, and kosher salt. Bring to a boil. Add the uncooked grits, black pepper, and garlic powder. Whisk continuously until the mixture is smooth, lump-free, and starts to thicken.
- Simmer Grits: Reduce heat to medium-low, cover the saucepan, and let the grits cook for 10 to 12 minutes. Stir occasionally to prevent sticking and ensure even cooking, until the grits are tender and most of the liquid is absorbed. Remove from heat.
- Add Butter and Cheese: Stir in the 1/4 cup unsalted butter and grated cheddar cheese into the hot grits until they are fully melted and well combined. Cover and keep warm while preparing the shrimp.
- Prepare the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of unsalted butter. Add minced garlic and sauté briefly until fragrant. Arrange the shrimp in a single layer and cook about 2 minutes per side until pink and opaque.
- Season Shrimp: Sprinkle Cajun seasoning and lime juice over the cooked shrimp. Stir well to evenly coat and combine flavors.
