  • 1 tablespoon olive oil
  • 14 oz smoked sausage (sliced into rounds)
  • 1 small onion (diced)
  • 1 bell pepper (any color, diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Cajun seasoning (plus more to taste)
  • 1 cup long-grain white rice (uncooked)
  • 2 1/4 cups chicken broth
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 green onions (sliced, for garnish)
  • Chopped parsley (optional)


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned.
  2. Add the diced onion and bell pepper, sauté until softened. Stir in garlic and Cajun seasoning.
  3. Include rice, chicken broth, paprika, thyme, salt, and pepper. Bring to a boil, then simmer covered for 18–20 minutes.
  4. Remove from heat, let sit covered for 5 minutes, then fluff with a fork. Garnish with green onions and parsley.

Notes

  • Adjust Cajun seasoning to taste preference.
  • Andouille sausage adds great flavor, but kielbasa or chicken sausage are good substitutes.
