- 1 tablespoon olive oil
- 14 oz smoked sausage (sliced into rounds)
- 1 small onion (diced)
- 1 bell pepper (any color, diced)
- 2 cloves garlic (minced)
- 1 teaspoon Cajun seasoning (plus more to taste)
- 1 cup long-grain white rice (uncooked)
- 2 1/4 cups chicken broth
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- Salt and black pepper to taste
- 2 green onions (sliced, for garnish)
- Chopped parsley (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned.
- Add the diced onion and bell pepper, sauté until softened. Stir in garlic and Cajun seasoning.
- Include rice, chicken broth, paprika, thyme, salt, and pepper. Bring to a boil, then simmer covered for 18–20 minutes.
- Remove from heat, let sit covered for 5 minutes, then fluff with a fork. Garnish with green onions and parsley.
Notes
- Adjust Cajun seasoning to taste preference.
- Andouille sausage adds great flavor, but kielbasa or chicken sausage are good substitutes.
- For extra heat, add cayenne or hot sauce.
