Ingredients
Scale
Chia Pudding Base
- 2 cups unsweetened almond milk
- 3 tablespoons butterfly pea flowers or 1 teaspoon butterfly pea powder
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 cup chia seeds
Parfait Layers and Garnish
- 1 cup Greek yogurt or coconut yogurt
- 1 cup granola
- 1 cup mixed berries (blueberries, strawberries, raspberries)
- Fresh mint leaves for garnish
Instructions
- Steep Butterfly Pea Flowers: Warm the almond milk slightly in a small saucepan, then add the butterfly pea flowers or powder. Let it steep for 5 to 10 minutes until the liquid turns a vibrant blue. If using whole flowers, strain them out to leave only the colored liquid.
- Sweeten and Flavor: Stir in the maple syrup and vanilla extract into the butterfly pea infused almond milk until well combined.
- Add Chia Seeds: Whisk the chia seeds thoroughly into the liquid, making sure they’re evenly dispersed to prevent clumping.
- Refrigerate to Thicken: Cover the mixture and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a thick pudding.
- Assemble the Parfaits: Once the chia pudding has set, start layering in serving glasses or jars. Begin with a layer of chia pudding, then add a layer of yogurt followed by granola and fresh mixed berries. Repeat the layers if desired to fill the glass.
- Garnish and Serve: Top each parfait with fresh mint leaves for a refreshing finish. Serve chilled immediately for the best texture and flavor.
Notes
- Adjust the sweetness to your preference by adding more or less maple syrup or honey.
- Use coconut milk instead of almond milk for a creamier chia pudding texture.
- To create a purple hue and add a tangy twist, add a squeeze of lemon juice to part of the chia pudding after steeping.
- This parfait can easily be customized with different fruits or granola varieties according to your taste.
