Description

Burgundy Mushrooms is a rich and flavorful dish featuring tender white button mushrooms simmered slowly in a blend of dry red wine, beef broth, and aromatic herbs. This classic French-inspired recipe results in mushrooms infused with deep, savory flavors and perfect for serving as a side dish or an elegant appetizer.

Ingredients

Scale

Ingredients

  • 2 pounds white button mushrooms
  • 1 750ml bottle burgundy or other dry red wine
  • 2 cups beef broth
  • ½ cup unsalted butter
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon low-sodium soy sauce
  • 3 cloves garlic, peeled and thinly sliced
  • 2 beef or chicken bouillon cubes
  • ½ teaspoon Bouquet Garni herb blend or dried thyme
  • ½ teaspoon freshly ground black pepper
  • Kosher salt, to taste

Instructions

  1. Prepare Mushrooms: Gently rinse the mushrooms with cold water and trim any tough parts from the stems. Alternatively, use a damp kitchen towel to clean off any debris without soaking them.
  2. Combine Ingredients: In a medium saucepan set over medium-high heat, add the mushrooms, burgundy wine, beef broth, butter, Worcestershire sauce, soy sauce, sliced garlic, bouillon cubes, Bouquet Garni or thyme, black pepper, and kosher salt to taste.
  3. Bring to Boil: Bring all ingredients to a boil, stirring occasionally to combine flavors thoroughly.
  4. Simmer Covered: Reduce the heat to low and cover the saucepan, allowing the mixture to simmer gently for 5 hours. This long cooking time will deeply infuse the mushrooms with the rich flavors of the wine and herbs.
  5. Simmer Uncovered: After 5 hours, remove the cover and simmer the mushrooms uncovered for an additional hour to reduce the liquid and concentrate the flavors.
  6. Serve or Store: Serve the Burgundy Mushrooms immediately as a warm, savory side dish, or refrigerate and consume within 3 days for best freshness.

Notes

  • Cleaning mushrooms gently with a damp towel prevents them from becoming waterlogged.
  • Using a dry red wine like Burgundy is key to achieving authentic flavor.
  • Simmering for a total of 6 hours may seem long, but it ensures tender mushrooms and rich taste.
  • Adjust salt towards the end as bouillon cubes and soy sauce already contain sodium.
  • Can be reheated gently on the stovetop or microwave before serving.
