Description

This Buffalo Chicken Grilled Cheese recipe combines tender shredded chicken tossed in spicy buffalo sauce with creamy cheeses and crispy buttered bread for a flavorful and comforting sandwich. Perfectly grilled on the stovetop, it offers a spicy, tangy, and cheesy experience that’s quick to prepare and ideal for lunch or dinner.

Ingredients

Scale

Cheese Mixture

  • 4 oz Cream Cheese, softened
  • 4 tbsp Crumbled Blue Cheese
  • ½ tsp Paprika
  • 1 tsp Ground Black Pepper
  • ¼ tsp Cayenne Pepper (Optional)

Chicken Mixture

  • 2 cups Cooked Chicken Breasts, shredded
  • ½ cup Frank’s Hot Sauce
  • ½ cup Homemade Ranch Dressing or your favorite store-bought brand
  • 2 tsp Minced Garlic

Sandwich Assembly

  • 8 slices Sandwich Bread
  • 4-8 slices Muenster Cheese
  • 4 tbsp Butter

Instructions

  1. Prepare Cheese Mixture: In a small bowl, combine softened cream cheese, crumbled blue cheese, paprika, ground black pepper, and cayenne pepper (if using). Mix well and set aside.
  2. Prepare Chicken Mixture: In another bowl, mix shredded cooked chicken with Frank’s hot sauce, ranch dressing, and minced garlic until the chicken is evenly coated with the sauce mixture.
  3. Assemble Sandwiches: Butter one side of each slice of bread. On the unbuttered side of four bread slices, spread the prepared cheese mixture evenly. Next, layer the buffalo chicken mixture over the cheese spread, then add slices of Muenster cheese on top. Close each sandwich with the remaining bread slices, buttered side facing out.
  4. Grill Sandwiches: Heat a skillet over low heat. Place the sandwiches in the skillet and cook slowly until the bread is golden brown and crispy, and the cheese is melted, about 4-5 minutes per side. Adjust the heat as needed to avoid burning while ensuring thorough cooking.
  5. Serve: Remove the sandwiches from the skillet and serve hot. Optionally, serve with extra buffalo sauce, ranch dressing, or blue cheese dressing on the side for dipping.

Notes

  • Use cooked chicken breast leftover or rotisserie chicken for quicker prep.
  • Adjust the amount of hot sauce to control the spiciness.
  • Butter the bread evenly to ensure a crispy crust.
  • Grill on low heat to allow cheese to melt fully without burning the bread.
  • Store leftovers in an airtight container and reheat in a skillet or toaster oven for best texture.
