Scale
Main Ingredients
- 2 cups water
- 2 cups uncooked rice
- 1 (10-ounce) can cream of chicken soup
- 1 (10-ounce) can cream of mushroom soup
- 2 cups cooked chicken, shredded
- 1/4 cup butter
- 1 cup milk
- 1 small white onion, diced
- 16 ounces broccoli pieces (fresh or frozen)
- 2 cups Cheddar cheese, shredded
Instructions
- Preheat Oven and Cook Rice: Preheat your oven to 350°F (175°C). While the oven is heating, cook the rice according to the package directions until it is tender and ready to use.
- Combine Ingredients: In a 9×13-inch baking pan, mix the cooked rice and shredded chicken. Add the cream of chicken soup, cream of mushroom soup, butter, broccoli pieces, and diced onion. Stir these together until well combined. Then fold in 1 cup of the shredded cheddar cheese evenly throughout the mixture.
- Bake the Casserole: Place the baking pan in the preheated oven and bake for 30 to 35 minutes. In the last few minutes of baking, sprinkle the remaining shredded cheddar cheese evenly on top of the casserole and allow it to melt and become bubbly.
- Rest and Serve: Once the cheese has melted, remove the casserole from the oven and let it sit for 5 minutes. Serve the casserole hot with your choice of side, such as a fresh dinner salad or breadsticks, and enjoy this warm, cheesy dish.
Notes
- You can use fresh or frozen broccoli; if frozen, thaw and drain excess moisture before adding.
- Shredded rotisserie or leftover cooked chicken works well for this recipe.
- To make it creamier, you can add a splash of milk when mixing the ingredients before baking.
- Feel free to substitute cheddar cheese with other types like Monterey Jack or Colby if preferred.
- Make sure not to overcook the rice initially, as it will bake further in the oven.
