Description

These Broccoli and Feta Brownies are a unique and savory twist on traditional brownies, combining nutrient-rich steamed broccoli with tangy feta and Parmesan cheeses. Perfect as a healthy snack or light meal, they’re easy to prepare and bake to golden perfection. The mixture of cheeses, herbs, and tender broccoli creates a delicious Mediterranean-inspired treat that’s both satisfying and wholesome.

Ingredients

Scale

Vegetables and Aromatics

  • 1 cup steamed and finely chopped broccoli florets
  • 1/2 cup finely chopped onion
  • 1 garlic clove, minced

Cheeses

  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese

Dry Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Wet Ingredients

  • 3 large eggs
  • 1/4 cup olive oil

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, cooking them until they become soft and fragrant, approximately 5 minutes. This step enhances their flavor for the brownies.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk the three eggs until lightly beaten to ensure even distribution throughout the batter.
  4. Combine Ingredients: Add the steamed and chopped broccoli, crumbled feta, grated Parmesan, sautéed onion and garlic mixture, olive oil, all-purpose flour, baking powder, dried oregano, salt, and black pepper into the bowl with the eggs. Gently stir until everything is just combined, avoiding overmixing to keep the texture tender.
  5. Bake: Pour the prepared batter evenly into the lined baking dish. Place it in the preheated oven and bake for 25 to 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean, indicating doneness.
  6. Cool and Serve: Allow the brownies to cool slightly in the baking dish before slicing into nine squares. Serve warm or at room temperature for best flavor.

Notes

  • You can substitute whole wheat flour for all-purpose flour to increase the fiber content and make the brownies heartier.
  • Add a pinch of red pepper flakes to the batter if you enjoy a subtle spicy kick.
  • These savory brownies freeze well; simply reheat in the oven when ready to serve for a convenient snack or meal addition.
