Description

These Blueberry Swirl Rice Krispies Treats are a delightful twist on the classic marshmallow cereal bars, featuring a sweet and tangy blueberry preserves swirl that adds a burst of fruity flavor. Perfect for a no-bake dessert or snack, they are easy to prepare, combining crispy cereal with gooey marshmallows and a refreshing blueberry jam layer for a colorful and delicious treat.

Ingredients

Scale

Main Ingredients

  • 6 cups Rice Krispies cereal
  • 1 (10-ounce) bag mini marshmallows
  • 3 tablespoons unsalted butter
  • ½ cup blueberry preserves or thick blueberry jam
  • ¼ teaspoon salt
  • Optional: ½ teaspoon vanilla extract
  • Optional: fresh blueberries for garnish

Instructions

  1. Prepare the pan: Grease a 9×13-inch baking pan with butter or nonstick spray and set aside to prevent sticking.
  2. Melt butter and marshmallows: In a large pot over medium heat, melt the unsalted butter. Add the mini marshmallows and stir continuously until they are fully melted and smooth, creating the marshmallow base.
  3. Season the mixture: Stir in the salt and vanilla extract if using, enhancing the flavor profile of the mixture.
  4. Combine cereal and marshmallow: Remove the pot from heat and quickly fold in the Rice Krispies cereal until the cereal is evenly coated with the marshmallow mixture.
  5. First layer in pan: Working quickly, transfer half of the mixture into the prepared baking pan. Use a greased spatula to gently press it down into an even layer.
  6. Add blueberry swirl: Dollop half of the blueberry preserves across the first layer. Using a butter knife, gently swirl the preserves into the cereal layer to create a marbled effect.
  7. Second layer: Add the remaining cereal mixture on top of the first layer and press it down evenly with the greased spatula to form the second layer.
  8. Final blueberry swirl: Dollop and swirl the remaining blueberry preserves on top of the second layer for a decorative and flavorful finish.
  9. Cool and set: Allow the treats to cool at room temperature for at least 30 minutes so they can firm up before slicing into bars.

Notes

  • For a brighter blueberry flavor, stir in a splash of lemon juice into the blueberry preserves before swirling.
  • You can slightly melt the preserves to make swirling easier and achieve a more defined marbled effect.
  • Store the treats in an airtight container for up to 3 days to maintain freshness and texture.
