- 1/2 cup unsalted butter (melted)
- 1 large egg
- 1 teaspoon vanilla extract
Blueberry Filling:
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking soda.
- Add wet ingredients: Stir in melted butter, egg, and vanilla until a crumbly dough forms. Reserve 3/4 cup for topping.
- Prepare crust: Press remaining dough into the pan to form the crust.
- Make blueberry filling: Toss blueberries with honey, cornstarch, and lemon juice. Spread over crust.
- Add topping: Crumble reserved oat mixture over the blueberries.
- Bake: Bake for 30–35 minutes until golden brown and bubbly. Cool before slicing into bars.
