  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract

Blueberry Filling:

  • 1 1/2 cups fresh or frozen blueberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking soda.
  3. Add wet ingredients: Stir in melted butter, egg, and vanilla until a crumbly dough forms. Reserve 3/4 cup for topping.
  4. Prepare crust: Press remaining dough into the pan to form the crust.
  5. Make blueberry filling: Toss blueberries with honey, cornstarch, and lemon juice. Spread over crust.
  6. Add topping: Crumble reserved oat mixture over the blueberries.
  7. Bake: Bake for 30–35 minutes until golden brown and bubbly. Cool before slicing into bars.
