Beef Filling

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (4 oz) can diced green chiles
  • 1/4 cup enchilada sauce

Enchiladas

  • 1 (15 oz) can red enchilada sauce
  • 8 flour tortillas, 8-inch
  • 2 cups shredded cheddar cheese or Mexican blend cheese

Garnish and Serving

  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream (optional)
  • Sliced jalapeños (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the enchiladas.
  2. Cook Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3 to 4 minutes until softened and translucent.
  3. Brown Beef: Add ground beef to the skillet and cook for 6 to 8 minutes, breaking it apart with a spatula as it cooks, until fully browned. Drain any excess fat to keep the filling from being greasy.
  4. Season Meat: Stir in minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Cook for an additional minute until fragrant.
  5. Add Chiles and Sauce: Mix in the diced green chiles and 1/4 cup of the enchilada sauce to combine flavors. Remove the skillet from heat.
  6. Prepare Baking Dish: Spread 1/2 cup of the enchilada sauce evenly over the bottom of a 9×13-inch baking dish to prevent sticking and add moisture.
  7. Assemble Enchiladas: Place a generous scoop of the beef mixture and a sprinkle of cheese onto each tortilla. Roll each tortilla tightly and position them seam side down in the baking dish in a single layer.
  8. Add Sauce and Cheese: Pour the remaining enchilada sauce uniformly over the rolled enchiladas. Sprinkle the remaining cheese on top for a rich, bubbly finish.
  9. Bake Covered: Cover the dish with foil and bake in the preheated oven for 20 minutes to heat through and melt the cheese.
