  • 3 tablespoons unsalted butter
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 ripe bananas (sliced)
  • 2 tablespoons dark rum (optional)
  • 1 teaspoon vanilla extract
  • pinch of salt


Instructions

  1. Make the Banana Bread: Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time and then stir in the vanilla extract followed by the mashed bananas. In a separate bowl, whisk together all-purpose flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing. Pour the batter into a greased 9×5-inch loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
